Saint Emilion Premier Grand Cru Classé 2011, Château Canon-la-Gaffelière

Château Canon La Gaffelière is certified organic. Its wine is classy, remarkably well-structured, complex, pure, and always elegant. Its vineyard has clay-limestone soil on the Saint Emilion escarpment, with a clay-sand mix at the foot of the slope. Fruit is picked by hand and carefully transported to the winery in small crates to ensure it arrives in pristine condition. Fermentation takes place in wooden vats, and the wine undergoes 15-18 months’ ageing in 80% new oak barrels. The final blend is around 50% Merlot, 40% Cabernet Franc and 10% Cabernet Sauvignon.
