Hand harvested vine by vine with the same row often getting several passes, the grapes travel a few metres to the winery where they are cold soaked and then fermented in tiny microvinifications of in some cases less than 100 L each. What follows is a meticulous blending of each variety from different types of deposit until Emilio comes to his ideal blend for ach individual year’s harvest. A truly artisan product.
