This delicate Pinot Noir was made by visionary winemaker, Elias López from vines planted in the year 2000 in Patagonia's Alto Valle del Río Negro. At 39˚ South, the marginal climate brings about a textured wine with complex flavours: cherry, raspberry, mushroom and forest floor, alongside vanilla and baking spice. Supple, soft and juicy in texture.
Winemaking
After manual harvest and destemming of 50% of the crop, with the remainder left in whole bunches for the spontaneous fermentation. Pressed mid-fermentation for completion without the skins, with the aim of producing a gentle, lightly-extracted wine. Malolactic conversion takes place in second- and third-fill 500-litre barrels, where the wine also matures for 11 months before bottling without filtration.
